Anhydrous citric acid: no water, more concentrated
Citric acid powder is marketed in two forms. The monohydrate incorporates a water molecule in its crystal, which represents around 8-9% of its weight. The anhydrous, on the other hand, crystallizes without water. Therefore, for the same weight, anhydrous citric acid provides more active acid in each spoonful.
In addition, since it does not contain crystallization water, it stays loose more easily, preserves better over time, and dissolves quickly in warm water.
